Anyone following my Instagram (@smilesbymeg) knows that Easter dessert involved more than just a Carrot Cake Roll, but also some coconut cupcakes. Since it’s my parents’ anniversary – Happy Anniversary, Mom and Dad! – and my mom always insists on celebrating with coconut cake, it seemed fitting to post this recipe now.
Things that happen when you have a big paper due on Monday morning: you push off your blog post until past 10pm. But I’m yet to skip a Sunday entry since starting law school, and I refused to let a little assignment get in the way.
“Pride keeps you warm on Easter.” That’s what my mom said to me as we speed-walked to church this morning in the bitterly cold wind wearing pretty dresses meant for much warmer weather. Being back in Massachusetts for the holiday, it really does seem like winter will never end. There actually is still snow on the ground. And I’m not just talking the snow piles in parking lots at the mall. In my parents’ backyard, there is snow.
Continuing on my theme of doing something extra for Lent, this week I baked lemon squares at the request of an art teacher at school. I bring things into the staff room pretty regularly, but usually it’s just leftovers of things I make for others. This time, the lemon squares are specifically for my fellow teachers. And it’s finally spring, so yellow, citrusy treats finally feel appropriate.
