Flourless Chocolate Mini Bundt Cakes

Ends of vacations are the worst. Though as COVID vacations go, this was a pretty good one. Erik and I spent a few days at a cabin where we could go for paddles on my stand up paddle board in the marsh. We saw lots of cool birds. We saw the wild horses at Assateague National Seashore. This week the humidity finally broke, meaning mornings and nights were once again bearable for baking. Amaretto Cupcakes

Barrister’s Ball (aka Law School Prom) feels like the beginning of the end of law school. We have one more week of classes, then exams, then we graduate, and I’ll never be a student again. Which is pretty crazy. I’ve made it almost 27 years into my life by being an almost perpetual student. So you’ll forgive me for getting sappy over the next couple of weeks.

I’m not really sure why the weather went from full Summer to deep Fall in the last couple of days, but it has definitely helped ease the transition into my last year of law school. Today, with the rainy coldness that is the outdoors, baking warm cupcakes indoors has been an ideal activity. It would have been a great day to make some sourdough bread, but that would have required much more foresight than I had this week.

Morning Glory Muffins

Happy birthday week, Mom! Yesterday, we kicked off the festivities with a surprise party for her. I think, miraculously, we actually pulled it off, and it was great to see so many people come out to celebrate such an amazing woman. Today, we kept the party going with some coconut baking: Morning Glory Muffins.

Anyone following my Instagram (@smilesbymeg) knows that Easter dessert involved more than just a Carrot Cake Roll, but also some coconut cupcakes. Since it’s my parents’ anniversary – Happy Anniversary, Mom and Dad! – and my mom always insists on celebrating with coconut cake, it seemed fitting to post this recipe now.
